
Experimenting in the kitchen and trying new recipes is a great way to tune out at the end of a long day at work, but also a great way to explore alternative cooking methods. I’ve loved trying vegan recipes lately, since I get an upset stomach when I eat meat and dairy products (I’m lactose intolerant). As part of my goals for this year, I decided to drastically reduce my meat and dairy intake, and I’m noticing less upset stomachs and bloating! And trying vegan recipes has been a fun challenge because I’m stepping into unknown territories.
I also decided to spend an extra 30 minutes in bed every morning, which means that I end up eating breakfast at work. But I promised myself that I would still have a healthy breakfast, and so far so good! I found some really tasty and easy recipes that I throw together the night before, and just grab it in the morning before I head out to work.
Chia pudding is a go-to breakfast option for me because it’s really easy to play around with the recipe, it’s delicious, and from what I’ve read, chia seeds are also really healthy. This breakfast coconut chia pudding is really filling and refreshing, and easy to take to work!

That looks so delicious! I also love using chia seeds because of their health benefits. I use them in my seed bread (http://www.mynewroots.org/site/2013/02/the-life-changing-loaf-of-bread/) which is really life changing as the title says 🙂 I must give your chia pudding a try!

My to go breakfast options are overnight oats or toast with peanut butter topped with bananas. 😋
Yes! I do overnight oats 1-2 times per week as well! And otherwise toast with some kind of topping – cheese or almond butter and chia seeds..YUM!
Do you have a good overnight oats recipe I should try?
Mine is the simple one.
Take oats in your jar, add almond milk, honey, 1 tsp cinnamon, 1 tsp vanilla extract then stir it up and refrigerate it overnight. Stir again add your desired fruits and nuts and top it with honey and enjoy. ☺️
Pretty much my recipe too!!! I’m trying a new combination this week and so far, it’s not very good hahaha I’m going to continue adjusting it so I can share it on the blog!! 🙂
