
My vegan health challenge for 22-days went so much better than anticipated. I learned new recipes, which I’m excited about, like this breakfast chia seed pudding, perfect for a hot summer morning.
I was a bit hesitant to try this recipe because of what it looks like, but it’s delicious! I love finding easy, quick and healthy recipes to add to my repertoire because it simplifies my morning routine.
A recurring ‘lesson’ in my life has been to not judge something before trying it, whether it’s related to food, trying a fashion trend, or even putting myself in a new and challenging environment. These are the experiences, whether you perceive them as small or big, that end up being the most important in life because you grow as a person from them.
Now back to the chia seed breakfast pudding. It’s really quite simple: use ½ cup chia seed (ground chia seeds works just as well), with 2 cups of a liquid of your choice. It can be any form of milk (cow, goat, almond, cashew, soy). That’s the basis of it, and the rest, just have fun with it! You can sweeten it a little bit, add some vanilla or any other extract that you like, and top it off with fruits and nuts! It’s a versatile recipe.
{ Ingredients }
½ cup chia seeds
2 cups almond milk
{ Optional Add-ons }
1 tsp vanilla extract
1 tbsp maple syrup
{ Other Alternatives }
Cashew or soy milk, or regular milk
Coconut milk
1 tbsp Honey
A dash of cinnamon
Other extracts such as almond or mint (I would recommend 1 tsp)
Unsweetened cocoa powder
{ Toppings }
- 1-2 cups fruits (banana, strawberries, raspberries, diced peaches, mango)
- 1-2 tbsp of nuts (pumpkin seeds, sunflower seeds, slivered almonds)
- 1 tbsp Hazelnut or almond butter
{ Instructions }
Mix the chia seeds with your liquids and the additions. Let it rest over night, or for 20 minutes.
Top with your choice of fruits and/or nuts!
