Living on my own for the past four years and having to cook for just one person has been an interesting experience. I’ve learned a lot of new recipes and tricks, but more importantly, I learned the value of a home-cooked meal.
Cooking for someone else is a gesture of love. I always enjoyed cooking for my family and my boyfriend because I felt as though I was taking care of them in a small way. What I realized is that taking the time after a long day at work to just be with my own thoughts, in my kitchen, preparing a delicious meal for myself, is also a gesture of love…towards myself. Why can’t I take the time and cook a nice meal for just me? I deserve it too!
Anyway, getting to the recipe: this honey dijon garlic chicken recipe was easy to make and so delicious. I love recipes where I can just throw it in the oven and not worry about it constantly, and still end up with something amazing.
