I love cooking, but like writer’s block, I sometimes get a ‘chef’s block’ where I am uninspired by recipes and can’t decide what to cook for the week. I can understand my Mom a bit better now when she would tell that she didn’t know what to cook, and it definitely makes me appreciate my parents even more. Every weekend, they would cook lunches and dinners to make sure that we always had healthy home-cooked meals during the week.

When I came across this recipe, I was intrigued, because I would not have thought of pairing peanut butter and coconut, two things that I love. I was also hesitant because I’ve always thought that meatballs are hard to make and take a lot of time. I was so wrong! I don’t even know where I got this perception, because I had never actually ever tried making meatballs.

I’ve already made these thai chicken meatballs in Peanut Sauce recipe 3 times in the last two and a half months. Yes, it’s that delicious and no I am not bored of it yet. This recipe is really easy and is bursting with flavors. It’s definitely going into my recipe book.

Ground turkey or beef

Basil instead of cilantro

Light coconut milk, to make it less heavy

Serve with quinoa or rice
