I find it hard to express in words how delicious some recipes are. When I speak, I use a lot of facial and hand gestures that help convey what I am trying to say. But when it comes to writing, I find it more challenging. If I had to describe this thai curry sweet potato & lentil soup in hand gestures and facial expressions, it would be a combination of flailing arms to show my excitement, and wide eyes to express to you the urgency that you MUST make this at home. There! Did I get my point across?

Seriously though, when I think of this soup, I get excited (does that make me lame?) because it was easy (and you probably know by now that I’m all about easy, quick and delicious recipes) and so incredibly delicious. I just wanted to dive into this soup because it’s so cozy and full of flavor. It warms you up on the inside with every single bite.

This looks just like the pumpkin muffins batter I just made before it was baked lol. But seriously though, I’ve only within the last year gotten into curries and Thai foods so I need to add this to my arsenal! I always bake/cook way more in the winter time.
