Vegan Pumpkin Apple Cake-Preview

After going fully vegan for three weeks this summer, I’ve been more inclined to try vegan recipes. I’ve been particularly intrigued with vegan baking because butter, eggs and milk are such staples and I’ve wondered how different the taste would be.

I decided to try this vegan pumpkin apple muffin recipe, and was pleasantly surprised with the results! (N.B. I couldn’t find my muffin pan so I used a square 9’’X 9’’ pan and it cooked through perfectly) I couldn’t taste the difference that I did not use any butter or eggs in the recipe! Although I would have liked a stronger pumpkin flavor, and the cake was extremely moist, I am going to try more vegan baking because it’s fun to explore alternatives.

Vegan Pumpkin Apple Cake-2Although I am not a nutritionist by any stretch of the imagination, I want to learn more about nutrition because what we put in our bodies has a big impact on our lives. When I eat healthy, I notice a significant difference on my energy levels and how I feel. Based on those simple observations, I want to learn more about how to ensure that I have a balanced nutrition so that I’m sure that I’m feeding my body what it needs to be healthy.

This sounds yummmm! I just baked some pumpkin chocolate chip muffins but I admit, there was nothing vegan about it lol. I am so with you on being conscious of what we put in our bodies and I truly believe our bodies need animal proteins and fats for optimal health (it’s the “diet” I’ve had for years lol). The only thing I did to tweak my recipe was use full fat organic butter sticks in place of the vegetable oil. Our bodies love and need those good fats to function and metabolize properly!

I follow the fb page Atlas Fit and personally know the family that owns/operates the gym. The articles they post can be technical sometimes but the more you read, the more you learn and understand! I truly cannot say enough about how much I’ve learned from them!

I saw your instagram picture of your pumpkin muffin. Looks delicious!!!!

I find it interesting to notice how my body reacts to different things that I eat. Although I don’t think I’d ever be able to go fully vegan, my body and digestive system definitely responded well to it…

Oh no!!! Hopefully it’ll be fixed soon! There are some fun recipes you can try like a cake in a mug?? I’ve even seen recipes for cakes in a crockpot!!

Oh how interesting! Why did you switch back?? And do you eat meat now or just fish? Any tips for the vegan diet? And more importantly, any vegan recipes or blogs that I should check out?? :)

It’s funny how these are actually muffins! Using just a different pan can make it look like a completely different dessert. They look gorgeous and I can’t believe they’re made without eggs, butter etc!
